It has been more than a month since I temporarily stop from posting my recipes on this website. But I'm back now after a long vacation. I became too busy taking care of my family and friends during the holidays. Last Christmas I prepared and cooked many dishes for the Noche Buena like lasagna, roasted chicken wings with garlic and butter, grilled short rib, meatloaf and mashed potato. For the dessert I prepared fruit salad with shredded young coconut (buko) and leche plan. Our friend Jun cooked pancit molo soup and our other friend Ice, brought some cookies. It was indeed a festive celebration of Christmas.
It is part of Filipino tradition to cook for Media Noche or New Year's Eve. I and my husband cooked and prepared the table with fruit basket (13 different kinds of fruit), cocktail hotdog, bacon wrap shrimp, chicken-pork adobo with hard boiled egg, gelatin, butchi (rice flour with mashed sweet potato inside, rolled in sesame seed). Our friend Chona, cooked spaghetti, blue berry muffin and fruit salad. It was really fantastic evening, full of fun, with loving friends and of course with great food.
