Kung Pao Chicken

Description:
This is a a simple dish with chicken and vegetables that fits to my budget. I can save more time and effort working in the kitchen . It does not not require too many ingredients but definitely love by my family because of its flavor.

Ingredients:
  • 1/2 kilo boneless chicken thigh/breast , cut into 2cm cubes
  • 2 pcs. zuccini, cut into cubes
  • 1 medium-sized carrot, cut into cubes
  • vegetable oil
  • 1 medium-sized onion, chopped
  • 2 garlic cloves, finely chopped
  • 3 tbsp worcestershire sauce
  • 3 tbsp oyster sauce
  • 1/2 tsp cayene pepper
  • salt and black pepper to taste

Procedure:
  1. Marinate the chicken in worcestershire sauce, salt and black pepper for 20 minutes.
  2. Heat the oil in the wok over medium heat; Add the onion and chicken, stir-fry for 3-5 minutes, or until almost cook.
  3. Add the garlic, carrot and zuccini and stir fry for another 3-5 minutes
  4. Add cayene pepper and oyster sauce and cook for 2-3 minutes. ,
  5. Serve hot with steamed rice   
  6. Option: Chopped peanut can be added to have extra crunch and garnishing.

Tuna-Squash Patties

Description:
In the Philippines, one of the favorite snacks is "okoy", this is made of fried  shredded squash with shrimp on top, that can be dipped in spicy vinegar and can be served with congee "lugaw or goto" or even with rice. What if  there's no available  shrimp and the only vegetable available in your refrigerator is squash? Well, as mother of two growing up kids, I want to provide them with healthy snacks aside from french fries and hamburger. I tried to combine fish and vegetable and used the available ingredients in my pantry. I successfully made a delicious snack not far from a  traditionally Filipino dish which they really missed a lot. I am recommending this to you and make this dish your family's favorite too.

Ingredients:
  • 1 can tuna in oil
  • 450 grams  shredded/ grated squash
  • oil (1 cup for frying)
  • 1 medium-sized onion, finely chopped
  • 3 tbsp cornstarch 
  • 1 tsp salt cup water 
  • 1/2 tsp black pepper
  • 2  large eggs (beaten)
  • 1/2 cup panko (Japanese) bread crumbs

Procedure:
  1. Pat dry the shredded squash with paper towel to drain the excess water and put in a mixing bowl.
  2. Drain the oil from the tuna and combine it with the squash the add the chopped onion.
  3. Mix the cornstarch, salt. pepper in a small bowl then add the beaten eggs.
  4. Combine all the ingredients  then add the panko bread crumb.Mix them thoroughly.
  5. Heat the oil in the pan. Make medium -sized patties and fry them until golden brown.
  6. Serve hot with steamed rice,congee, or toasted bread  if desired.    
  7. Option: For dipping sauce,you can use  soy sauce or vinegar with chopped onion and black pepper .
